Breakfast Pan Pizza – A Perfect Meal For Morning Or Night

A simple yet delicious homemade pan pizza that is topped with your favorite breakfast foods. It combines a creamy sausage and gravy sauce with scrambled eggs, bacon, and cheese, topped on your favorite pizza crust, for a meal you can enjoy morning or night!

We aren’t really a breakfast food family – at least not in the mornings. However, we do like to eat a lot of breakfast-type foods for dinner. Biscuits and gravy, French toast, waffles, etc.

This breakfast pizza is a perfect fit if you want those breakfast flavors, just maybe not first thing in the morning. Or, who said you can’t enjoy pizza for breakfast?

The best part is that you can use several different shortcuts to make the recipe easier to make. Instead of frying up strips of bacon, I use real bacon bits. Instead of shredding my own cheese, I use bagged cheese. That helps to make the prep work go a lot faster.

The result of this recipe is a large pan pizza that can really feed a crowd. The leftovers are also delicious and can be frozen.

Ingredients For Breakfast Pan Pizza

The homemade breakfast pan pizza is broken up into three main parts: the sausage gravy, the scrambled eggs, and the remaining ingredients. Don’t be overwhelmed by the long list, though!

You will also need a good-sized baking pan that has a bit of an edge to it. I have an 11 x 17″ Farberware Nonstick Bakeware Pan (Product Link) that I use most often. This exact size isn’t required, but you need one that will fit your pizza dough and all these ingredients. You can also split the ingredients into two smaller pizzas if you prefer.

Sausage and Gravy

This recipe is a lot like my biscuits and gravy recipe, but it doesn’t have as much liquid. We want the gravy to be nice and thick to hold its shape when on the pizza crust.

  • Sausage – Use regular ground sausage that hasn’t been seasoned. If you prefer a bit of spice, use hot ground sausage.
  • Flour – The flour is the thickener for the gravy.
  • Half and Half – You can also use 2% or whole milk, but it won’t be quite as thick or as rich as using half and half.
  • Season Salt – The season salt adds a bit more flavor compared to just regular salt.
  • Pepper – The only other seasoning needed for the gravy.

Scrambled Eggs

You can use whatever recipe you normally use to make scrambled eggs. I normally add salt and pepper when I make normal scrambled eggs. However, since the gravy, cheese, and bacon already have salt in them, skip it when making breakfast pizza.

  • Eggs – I usually use 8 eggs. You need around 6 to 8 eggs to have enough to cover the pizza.
  • Milk – A little bit of milk helps to make the scrambled eggs nice and fluffy.

Misc Ingredients – Breakfast Pan Pizza

These are the other three main ingredients you need to make the pizza.

  • Shredded Cheese – It’s not really a pizza without shredded cheese! I like to use a combination of shredded mozzarella and cheddar cheese, but you can use whatever you prefer. Bagged cheese is perfectly fine.
  • Bacon Bits – I cheat and like to use bacon bits. However, you can use cooked bacon if you want. If so, swap the bacon bits for about ⅓ cup freshly cooked chopped bacon.
  • Pizza Crust Dough – You will need a pizza dough that will fit an 18 x 13″ baking sheet. I use this recipe for my pizza dough. In these images, the dough proofed a bit too long and is a bit thicker than I’d usually like. However, it was still delicious! Whatever dough or crust you use, make sure it is thick enough to handle all of the toppings on this pizza!

Instructions For Breakfast Pan Pizza

The Pizza Dough

The first step is to get your pizza dough ready. You can use homemade or store-bought. Use whatever crust you prefer, but make sure it is sturdy enough to hold up to all the toppings on this breakfast pizza. You need enough dough to fill up an 18 x 13″ baking pan.

Stretch the pizza crust to fill the entire bottom of the pan. You can also shape the pizza into a circle if you prefer. Either way, it doesn’t have to be perfect.

This is the recipe I use for the pizza crust in the images. One serving of the dough is perfect for this recipe.

Whatever you use for the dough, go ahead and place it in your baking pan. If it doesn’t want to stretch, allow the dough to sit for 10 minutes and then try again. Set the pan aside while you prep the other ingredients.

While you prepare the other ingredients, preheat your oven to 450º Fahrenheit. If your pizza crust has a different temperature, follow those directions.

Make The Sausage Gravy – Breakfast Pan Pizza

Now it’s time to get your sausage and gravy ready. This will act like the sauce for the pizza, but instead of a red sauce, we are using the gravy.

Brown the ground sausage in a skillet over medium heat. Do not drain the grease. Once the meat has browned, add the flour and stir until it absorbs most of the grease. Continue cooking for 2 to 3 more minutes.

Slowly pour in the half and half and add the seasonings. Whisk until everything is well combined. Bring the mixture to a boil over medium heat, stirring frequently.

Reduce the heat to low and continue cooking over a low simmer until the gravy thickens to your liking. Note that the gravy will thicken a bit after it cools. Once you are happy with the consistency, set the pan aside but keep it warm.

Make The Scrambled Eggs & Bacon

Now it’s time to make the scrambled eggs. Use whatever recipe you have for your favorite eggs. Make sure you use about 6 to 8 eggs, so you have enough to cover the whole pan.

If you don’t have a favorite recipe, simply whisk together the whole eggs and milk until combined. Cook the mixture over low heat in a greased pan until the eggs have firmed up. Set aside.

If you are using raw bacon, cook that as well. Once it is cooked to your liking, chop it up into bite-sized pieces. I like to use bacon bits to make the process a bit easier.

Assemble And Bake

Now it’s time to assemble the pizza. I like to set everything up as a sort of assembly line. First, add the sausage and gravy to the pizza crust. Use a spatula to spread it out so it covers most of the crust. Keep a small amount of the edge empty.

Next, add the eggs. Spread them out so they are even across the pizza. Top the eggs with your choice of shredded cheese. Lastly, sprinkle the top evenly with bacon bits or chopped up cooked bacon pieces.

Bake in a preheated oven for around 15 minutes or until the cheese is bubbly. If your crust requires a specific cooking time, follow those instructions instead. Allow the pizza to cool slightly, then cut and enjoy!

Will store-bought or homemade pizza dough work for the Breakfast Pizza? You can use either a homemade pizza dough recipe or purchase one from the store. Bake the pizza at whatever temperature and time your specific crust requires in order for it to be cooked through.

What type of cheese is best for Breakfast Pizza? I like to use a combination of mozzarella and cheddar cheese. However, you can use whatever type of cheese you prefer.

How do I store the pizza after baking? Store any leftovers in an enclosed container. Place them in your refrigerator and consume within two to three days.

Can the breakfast pizza be frozen? Yes, you can freeze the pizza after baking. Allow the pizza to cool to room temperature. Then wrap the pizza in foil or place it in a freezer-safe ziplock bag. Freeze for up to three months. To reheat, remove the pizza from the foil and cook in a microwave until heated through. You can also reheat it in a low oven.

Can the pizza be prepared ahead of time and then baked later in the day? Yes, prepare and assemble the pizza as described. Store covered in your refrigerator until you are ready for baking.

Ingredients

Sausage and Gravy

  • 1 lb ground sausage
  • cup flour
  • 2 cups half and half (or heavy milk)
  • ½ tsp season salt
  • ½ tsp pepper

Scrambled Eggs

  • 8 whole eggs
  • ¼ to ½ cup milk

Misc Ingredients

  • 2 cups shredded cheese
  • ½ pkg bacon bits (3.5 oz pkg) (⅓ cup chopped bacon)
  • 1 pizza dough

Instructions

  • If needed, start by making or preparing your pizza crust. I use a homemade batch, but you can use store-bought if you want.
  • Preheat your oven to 450º Fahrenheit.
