Instructions
Heat oil over medium heat in a large 12" skillet or Dutch oven that has a lid.
While the oil is warming up, slice up the smoked sausage into discs. If desired, cut each of those in half for more bite-sized pieces. If needed, dice the onion and mince the garlic as well.
Add the smoked sausage and diced onions to the skillet and cook until the sausage has started to brown and the onions have turned translucent. Stir frequently to avoid burning.
Add the minced garlic and cook for about 30 seconds or until fragrant.
Mix in the rest of the ingredients other than the shredded cheese (broth, tomatoes, milk, pasta, and seasonings). Bring the mixture to a boil. Ensure that as much of the pasta is covered with the liquid as possible.
Reduce heat, cover with a lid, and let simmer for 15 minutes or until the pasta is al dente. Stir once about halfway through cooking.
Turn off the heat and stir in the shredded cheese until it has melted. Taste and add more salt and pepper if needed. Enjoy!
