Soft and chewy chocolate chip cookies stuffed to the brim with bright, spring-colored M&Ms bring a festive and fun look to any kitchen counter, especially when paired with seasonal colored M&Ms!
Preheat oven to 375º Fahrenheit. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl using a whisk or a stand mixer with a paddle attachment, cream together the butter and both types of sugar until light and fluffy. Add in the eggs and vanilla and stir well.
Slowly add in the dry ingredients until just blended. Do not overmix the batter.
Fold in the chocolate chips and M&Ms. Stir using a spoon or spatula to avoid overmixing.
Use a 1.5 Tablespoon cookie scoop to place rounded amounts of cookie dough onto a baking sheet lined with parchment paper.
Bake in preheated oven for 13 to 15 minutes or until the edges are slightly browned. Remove from oven and immediately add a few extra M&Ms to the top of each cookie (optional).
Allow to cool before removing from the parchment paper. Store cookies in a sealed container at room temperature or in your refrigerator. Enjoy!
