This fresh, delicious mix of fruit is perfect for your next potluck or family gathering. Or, if you are like us, your family can enjoy it all week long!
Peel and core pineapple. Chop into 1" sized pieces and place into a large bowl.
Wash and lightly dry raspberries and strawberries. Add the raspberries to the bowl whole. Cut the strawberries in half or in quarters, depending on the size of the fruit. Small ones can be left whole. Add to bowl.
Peel the kiwi, then cut them into 1/2" chunks or to desired size. Add to the bowl as well.
Carefully mix the fruit together. Sprinkly with about 2 Tbsp of the vanilla pudding mix powder. Mix thuroughly to help distribute the powder throughout. Taste and add more powder if it doesn't seem sweet enough.
Store covered in the refergerator until ready to serve. Enjoy!
Notes
Feel free to swap out a different fruit or add in more kinds if desired. Blueberries are a great addition to this mix. The flavor profile will vary when doing this, but you can definitely make this salad your own!
