How To Make A Simple Summertime Fruit Salad Recipe

If you are looking for a delicious yet healthy recipe to bring to your next potluck or family get-together, consider making this simple summertime fruit salad!

There’s nothing like biting into a piece of ripe, juicy fruit in the hot summertime. Whether it is picked from your own backyard orchard or purchased at the local farmer’s market, there’s just something about fresh fruit that hits differently! Heck, even grocery store fruit can be delicious if it is in season.

Whenever we get invited to family gatherings, one of my favorite things to bring is fruit. It’s something I know my kids will eat so they at least won’t go hungry during the party. And besides, you can have only so many casseroles and comfort food dishes, right?!

Me and my family are big fruit lovers. My teens can devour a pint of raspberries before I even have a chance to pop one in my mouth. And trust me, I’m not complaining! I know there are some kids (and adults, too) who don’t seem to enjoy eating fruit, but we are definitely not those people.

So I enjoy bringing this dish to places we are invited to since I know they’ll eat it. Heck, we even enjoy making it and eating it throughout the week. And it’s not just good for summertime; Feel free to adjust it for winter seasonal fruit as well.

Summertime Fruit Salad

One of the best parts about this salad is that you can adjust the type of fruit you use to meet your family’s needs. Don’t like pineapple, no problem! Just substitute whatever fresh fruit that is seasonal and that your family enjoys. Just keep in mind that the final flavor profile will vary depending on whether the fruit you choose is sour, sweet, tart, etc.

  • Raspberries
  • Kiwi
  • Vanilla Powdered Pudding Mix

This combination of fresh fruit makes this dish sing, but feel free to swap out your own favorite fruits!

Instructions For Summertime Fruit Salad

You will also need a sharp knife as well as a cutting board and a large bowl. And I mean a LARGE bowl; It makes mixing the fruit easier in the end.

The first step in making the summertime fruit salad is to prepare your fruit. Usually, that means washing and cutting them into bite-sized pieces. If making my fruit salsa recipe (recipe to come in the future), you would want to cut them into smaller pieces, but for this recipe, usually 1/2 to 1″ pieces are best.

Pineapple

For the pineapple, you need to remove the rind as well as the core. I find it easiest to cut off the top and bottom of the pineapple first. Then, stand the pineapple on its end. Take a large, sharp knife and carefully cut down the sides. Try to go deep enough to remove most of the seeds as well as all of the tough rind.

After that is done, cut it right down the middle. Take each of those halves and cut them again so you are left with four long pineapple chunks. Take one of the quarters at a time, stand it up on its end, and cut it to remove the woody core. Do that for all the remaining pieces.

I then usually cut each of the quarters into three or four long strips, depending on size. Chop those into chunks and the pineapple is done. Add the pieces to a large bowl.

Move on to the next fruit.

Strawberries & Raspberries

For the raspberries, we usually just toss those in whole. They are already bite-sized and there is no need to mush them up attempting to cut them into small pieces. Just be sure to wash them well.

With the strawberries, we like to normally cut them in half or into quarters, depending on their size. Some of the smaller ones we leave whole if they are bite-sized.

You can also add other berries like blackberries, blueberries, or even black raspberries. Whatever your family’s favorites are will work great in this recipe.

Kiwi

Now comes the kiwi. If you have never peeled kiwi before, then it can be rather challenging. Lucky for you, I have put together a quick video that shows you how I like to peel kiwi quickly and easily. You can watch the video below right before the recipe card. But all you really need is a small spoon and a knife.

Simply cut off both ends of the kiwi first. Then, take the small spoon and run it around the inside of the peel, trying to keep it as close to the peel as possible without ripping through.

Go around the entire peel on one side. Flip the kiwi over, and repeat the process on the other side. The kiwi fruit should then just slide out easily. It takes a little practice, but you will be able to peel kiwi in no time at all before long.

Once the kiwi are all peeled, cut them into bite-sized pieces and add them to the bowl.

I usually don’t measure the pudding powder but use about a third to half of the package and save the rest for later.

Mix and Sprinkle – Summertime Fruit Salad Recipe

Once all of the fruit has been chopped and added to the bowl, it’s time to mix and add the “secret” ingredient: vanilla instant pudding powder mix.

I don’t recommend using the entire package of powder. Instead, I only use about a third of it and save the rest for the next fruit salad time. Start with about 2 tablespoons; You can always add more!

Simply sprinkle the powder on top of the fruit and use a large spoon to mix it all in. Be sure to sample a piece or two and add more powder if you want the mix to be a little sweeter.

Ingredients

  • 1 whole Pineapple rind & core removed, cubed
  • 1 pint Raspberries
  • 1 lb Strawberries cut in half
  • 4-6 whole Kiwi peeled and cubed
  • 2 Tbsp Vanilla pudding mix

Instructions

  • Peel and core pineapple. Chop into 1" sized pieces and place into a large bowl.
  • Wash and lightly dry raspberries and strawberries. Add the raspberries to the bowl whole. Cut the strawberries in half or in quarters, depending on the size of the fruit. Small ones can be left whole. Add to bowl.
  • Peel the kiwi, then cut them into 1/2" chunks or to desired size. Add to the bowl as well.
  • Carefully mix the fruit together. Sprinkly with about 2 Tbsp of the vanilla pudding mix powder. Mix thuroughly to help distribute the powder throughout. Taste and add more powder if it doesn't seem sweet enough.
  • Store covered in the refergerator until ready to serve. Enjoy!

Notes

Feel free to swap out a different fruit or add in more kinds if desired. Blueberries are a great addition to this mix. The flavor profile will vary when doing this, but you can definitely make this salad your own!ย
