These bagel breakfast sliders are one of my family’s absolute favorites! They are easy to make, packed full of flavor, and totally customizable. The catch is that we don’t typically make them for breakfast. We actually normally have them as dinner instead!
The nice thing about this recipe is that it is totally customizable to your family or each individual person as well. You can add or take away any aspect of the ingredients and make it a recipe your family can really enjoy! (Well, maybe aside from the bagels, lol.). The recipe also keeps well as leftovers (My teenage son actually prefers to eat them cold the next day.) You can even freeze leftovers for a quick grab-and-go microwavable breakfast or dinner, which comes in handy on those busy weekdays.
As with most of my recipes, this one includes some from scratch ingredients and some ingredients that you can cheat on. What you include is totally up to you, but this recipe will give you a great base to start off with.

It’s also a great way to use up a lot of eggs at one time if you are overrun with fresh eggs like we are at the moment. Trust me, I know it’s a blessing for sure! (You can also try to make easy-to-peel hard-boiled eggs if you have an overabundance of eggs as well.)

How To Make Bagel Breakfast Sliders
Gather Your Ingredients
As with any recipe, the first step I like to do is gather my ingredients. I can’t tell you how many times I’ve gone to make a recipe only to realize halfway through that I’ve forgotten to get an ingredient or two. It will save you much frustration later on if you check to make sure you have everything from the start. (At least with this recipe, you can improvise with something else usually if you don’t have something on hand though.)
Another important thing about this recipe is that the measurements aren’t exact. If you are a huge fan of eggs, use more. Do you prefer to drown your sliders in cheese, then use more. If you don’t enjoy everything bagel seasoning leave it off or use less. You get the idea! I kind of just go by look for a lot of these ingredients as opposed to using exact measurements.

You are going to need the following ingredients:
- 8 bagels
- Butter
- Bacon or bacon bits
- 1 lb ground sausage, browned
- 8 Eggs, scrambled
- About 1/2 a cup of milk or half and half (or whatever you use to make scrambled eggs)
- Salt and pepper (to taste for making scrambled eggs)
- About 1 cup shredded cheddar cheese
- A cooking spray of some sort
- Bagel everything seasoning
Prepare The Bagel Breakfast Sliders
The first step is to preheat your oven to 350º F. After you have that going, grab your 9×13 baking dish and lightly coat it with cooking spray.
Next, grab your bagels. You can use storebought or homemade – Both are totally fine! I am using the sourdough bagels that I love to make in these pictures. The recipe for the bagels is from The Clever Carrot and it is one of my absolute favorites! But again, storebought works just fine!

Slice your bagels in half. You then want to place the bottoms in the baking dish. I like to place the tops around the dish on the outside so I can make sure the tops are matched up correctly with the bottoms. No, this isn’t necessary, but it’s something I find helpful so I don’t end up with one huge top on a small bagel bottom. (This is more of an issue because my sourdough bagels are never the same size as you can see in the above photo.)
Butter both sides of the bagels. This is where you can add a bit of moisture if you’d like. My family prefers these as-is, but they might be a bit dry for some. You can use a homemade sausage gravy made from the drippings after browning the sausage or whatever else you’d like really.
Make The Slider Ingredients
Next, you need to make all of your bagel breakfast slider ingredients. In our case, that would be the ground sausage and the scrambled eggs. If you were to use bacon slices, you’d want to cook those now as well. I typically cheat and just use bacon bits because cooking bacon stresses me out for some reason, lol!

I start by browning my ground sausage. You can use whatever type of sausage you like, but we love a local grocery store’s mix of breakfast sausage. Leave the grease in the pan after it is browned, but transfer the sausage to a small bowl and set aside. My ground beef chopper helps to break up the sausage into smaller pieces and I use it every time I brown ground beef. (The old one I used to have in these pictures is no more, but here is the new one I have now – Product Link: Meat Chopper)
Prepare your scrambled eggs. For us, I use eight eggs and about half of a cup of half-and-half or milk. Honestly, it’s more like a “glug glug” of half and half for each egg I use, but use whatever your favorite scrambled egg recipe calls for. I also like to add salt and pepper to my scrambled eggs when making them. Again, make yours however you normally do, but I suggest cooking at least eight eggs (one for each slider).
Cook your scrambled eggs in the same pan that you used for your ground sausage. Once those are cooked to your liking, you are ready to assemble!
Assemble the Sliders
We’re finally at the point where we can put together our bagel breakfast sliders! Woo hoo (it doesn’t take much to excite me)!
Onto each bagel bottom, distribute your scrambled eggs as evenly as you can. Next, add a nice scoopful of ground sausage on top. Sprinkle on your bacon pieces or bacon bits on top of that. Lastly, add your shredded cheddar cheese. The amount of cheese you use can vary depending on your preferences (or in my case, how much cheese I have left in the bag).

Put the tops of the bagels on to finish your slider sandwiches. At this point, I like to lightly spray the tops with butter-flavored cooking spray and sprinkle on the everything bagel seasoning. Again, this is optional but the seasoning really adds a great flavor profile to these sliders.
Bake & Eat!
Place the baking dish into your oven and bake uncovered for about 10 minutes. You want the cheese to be nice and melted and all of the ingredients to be warmed inside. Serve warm.
These also make excellent leftovers when kept in your fridge and reheated in your microwave. You can also wrap these up individually and freeze them for an easy grab-and-go breakfast or simple dinner. Enjoy!

Bagel Breakfast Sliders
Ingredients
- 8 bagels
- 1-2 Tbsp butter
- Bacon or bacon bits
- 1 lb ground sausage
- 8 large eggs
- ½ cup half and half (or milk)
- Salt and pepper (to taste)
- 1 cup shredded cheddar cheese
- Oil spray of some sort (I use butter-flavored spray)
- 1 Tbsp everything bagel seasoning
Instructions
- Preheat oven to 350º F. Slice bagels in half and lightly butter each side. Place the bottoms in a lightly greased 9×13 baking dish and set the tops aside.
- If using bacon, cook in a medium-sized skillet until desired crispiness. Set on a paper towel to drain and let cool. Once cooled, tear or cut into small pieces.
- Brown the ground sausage in same skillet. Once browned, transfer to a small bowl and set aside. Do not drain the grease out of the skillet.
- Crack your eggs into a medium bowl. Add your half and half, salt, and pepper to make scrambled eggs (or use whatever ingredients you normally use to make scrambled eggs). Mix until well combined. Cook eggs on the warm skillet using the grease leftover from the sausage.
- Start to assemble your bagels. Add spoonfuls of ground beef on top of each bagel bottom in your baking dish. Next add the eggs and bacon bits/pieces. Top with cheese. Place the bagel top on eeachbagel bottom.
- Lightly spray the tops with butter-flavoroed cooking spray. Sprinkle on the everything bagel seasoning.
- Cook bagels in preheated oven for about 10 minutes or until the cheese has melted and the bagels are warmed throughout. Serve warm, transfer to refrigerator, or wrap to freeze.
