Chicken And Biscuits – A Simple Dinner Recipe Ready In Minutes

An easy-to-make, hearty comfort food that is comprised of a creamy vegetable and chicken sauce, enjoyed over warm homemade or store-bought biscuits.

While there are several different variations of chicken and biscuits, this recipe is one of the easiest you can make. It uses only seven simple ingredients plus your choice of homemade or store-bought biscuits.

In addition, it comes together in less than 15 minutes when using leftover rotisserie chicken and baked biscuits. Even if you need to cook the chicken and/or bake the biscuits from scratch, it’s still a simple, quick recipe that can have dinner on the table in around half an hour.

The creamy chicken and vegetable sauce comes together using one saucepan. Then, when you are ready for serving, you simply pour the sauce over warm, freshly baked biscuits for a delicious and hearty dish that is perfect for filling you up and leaving you satisfied.

How To Make Chicken And Biscuits

Minus the biscuits, this is all you need to make my chicken and biscuits.

Ingredients  

  • Cream of Chicken Soup – You can use store-bought cream of chicken soup, or you can make your own homemade version. If you want to alter the flavors of the dish, try your hand at other types of “cream of” soups. However, we like the flavors of the tried-and-true cream of chicken soup the best.
  • Milk – The milk is what helps to make the sauce nice and creamy. We usually use 2% milk, but 1% will also work. Whole milk will make for a richer, thicker sauce. I would avoid using skim milk, though, since this might make it a bit bland and runny.
  • Salt, Pepper, and Celery Salt – The seasonings help to add flavor to the sauce.
  • Mixed Vegetables – Use a can of mixed vegetables or a package of frozen vegetables. Unfortunately, fresh vegetables won’t get soft enough in the short cooking time. If you prefer to use fresh vegetables, saute them until soft prior to adding them to the sauce. The variety of vegetables you use is totally up to your preferences. We often skip the store-bought vegetables and throw in some of our own canned green beans or even frozen peas. Great vegetable options are celery, carrots, peas, onions, green beans, lima beans, cubed potatoes, and sweet corn.
  • Chicken – This recipe is great because you can use leftover rotisserie chicken, canned chicken, or cook the chicken while making the sauce. The chicken can then be shredded or cubed before being thrown into the sauce.
  • Biscuits – The biscuits can be made while the rest of the chicken and vegetable sauce is cooking, or you can use store-bought biscuits. If you want the recipe that I always use for our Chicken and Biscuits meal, you can find that here: “Baking Powder Biscuits”.

The Chicken

How you start this recipe will depend on what ingredients you use. If you are using rotisserie chicken, then all you need to do is shred it to prepare. If you are using canned chicken, simply drain any excess liquid.

For raw chicken, get it started cooking before you prepare the sauce. I like to cut up large chicken breasts into strips for quicker cooking. For chicken tenders, cook them as is.

Sprinkle each piece with a little bit of salt and pepper and then saute them in a cast-iron or other skillet until the internal temperature reaches 165ยบ Fahrenheit. As an alternative, bake the chicken in an oven.

The Biscuits

Next, you want to get the biscuits ready. For frozen biscuits, preheat the oven and bake as directed. For tube biscuits, also bake those as directed.

While frozen or canned biscuits work fine, fresh biscuits are hard to beat. If you are making biscuits from scratch, gather the ingredients and make them as your recipe directs.

The Sauce

While the biscuits are baking, it’s time to get your sauce together. In a large saucepan, add together the cream of chicken soups, milk, salt, pepper, and celery salt. The sauce comes together really quickly. This is before adding the vegetables and pre-cooked chicken.

If desired, reduce the amount of table salt by half and taste before adding the rest. Since the recipe also includes celery salt, it might seem a bit salty to some people. (We are a salt-loving family, so adjust it accordingly!)

If you are using canned vegetables, drain off any liquid before adding them to the sauce mixture. Frozen vegetables can go in as is. Also, add in your pre-cooked shredded or cubed chicken and mix well.

Allow the chicken and vegetable sauce to simmer for 10 minutes over low heat, stirring often to prevent burning. Test frozen vegetables to make sure they are heated through after 10 minutes. If not, continue to simmer until they are warm.

Pour the chicken and vegetable sauce over the biscuits and enjoy! Store any leftover sauce in your refrigerator separately from the biscuits to prevent them from getting soggy.

Freezing The Sauce

The sauce can also be frozen to be reheated and added to biscuits at a later time for an even quicker weeknight. After making the sauce as described above, allow it to come to room temperature. Then store it in freezer-safe containers in your freezer for around 3 months.

Since the sauce is stored separately from the biscuits, you can freeze the sauce and enjoy it at a later date for an even quicker weeknight dinner!

To reheat, allow the sauce to thaw out overnight in the refrigerator before reheating over low heat on the stove. Be sure to stir the sauce often when reheating to prevent burning. Serve over freshly baked biscuits (or enjoy as-is!).

  • Prepare and cook the chicken first. If you are using rotisserie chicken, shred it. If you are using canned chicken, simply drain any excess liquid. For raw chicken, cook it using your preferred method. (We normally season the chicken with salt and pepper and cook it in a cast-iron skillet.) Set the chicken aside.

The Biscuits

  • Now get the biscuits ready. For frozen or canned biscuits, preheat the oven and bake as directed. If you are making biscuits from scratch, gather the ingredients and make them as your recipe directs. (For a good but simple recipe, try Baking Powder Biscuits or make drop biscuits.)

The Sauce

  • In a large saucepan, add together the cream of chicken soups, milk, salt, pepper, and celery salt. Whisk until smooth and well combined.
  • If using canned vegetables, drain off any liquid. Add to the sauce mixture. Frozen vegetables can go in as is. Add the shredded or cubed chicken as well and mix well.
  • Allow the chicken and vegetable sauce to heat up and simmer for 10 minutes over low heat, stirring often to prevent burning.
  • Pour the chicken and vegetable sauce over the biscuits and enjoy!
