A foil-wrapped, all-in-one meal made from smoked sausage, your favorite vegetables, and delicious seasonings for a quick and simple dinner with minimal cleanup.

Whether you want to grill it up on a hot summer day or pop everything in the oven for a simple, no-mess meal, this recipe is for you! It’s quick to assemble, requires little to no cleanup after it cooks, and can be made using your favorite vegetables.
These foil-wrapped sausage and vegetable packets are one of our favorite ways to use loads of freshly harvested vegetables from our garden. The best part is that it is very versatile.
You can swap the veggies out based on whatever you have in your fridge or pantry at the time. Zucchini, sweet corn, potatoes, green beans, sweet potatoes, and carrots are all great options.

How To Make Foil-Wrapped Sausage And Vegetables
This is an extremely simple recipe. Basically, you prep the ingredients, add the seasonings, and cook it. It doesn’t get a whole lot easier than that!
For ingredients, these are the main ones we use regularly. However, you can swap the veggies or type of sausage for your favorite type.


- Smoked Sausage – Any type of pre-cooked smoked sausage or turkey works great for this recipe. We often use beef smoked sausage.
- Potatoes – New or baby potatoes work best for this recipe. Russet potatoes or even sweet potatoes can also be used if desired, but I highly suggest using baby potatoes.
- Vegetables – Here’s where you can experiment a little bit. We often use zucchini and green beans because we grow a lot of those in our garden. You can also try other vegetables like sweet corn, rampacante squash, carrots, etc.
- Garlic – If you are a garlic lover like I am, then adding minced garlic is a must! However, if you hate peeling and mincing garlic every time a recipe calls for some, consider batch mincing and freezing it. - Butter – While butter isn’t required, I highly suggest using it. It helps to provide a richer flavor, distribute the seasoning, and keep the ingredients moist.
- Seasonings – This recipe calls for a blend of paprika, Italian seasonings, garlic powder, onion powder, salt, pepper, and dried parsley. Feel free to experiment with your own seasonings.
Step-by-Step Guide For Foil-Wrapped Sausage And Vegetables

Start by preheating your oven to 425º Fahrenheit (F). While that warms up, begin prepping your ingredients. In a small bowl, mix together all of the seasonings. Set this aside for now.
In a large bowl, mix together the cut-up vegetables, smoked sausage, and minced garlic. Try to keep everything around the same size for even cooking. Softer vegetables like the zucchini can be a bit larger since they cook faster than harder vegetables like potatoes or carrots.
For the potatoes, cut up any that are larger than 1″, otherwise they won’t cook fast enough. For any baby potatoes you leave whole, pierce them with a fork a few times.
In total, you will have around 12 cups of packet filling. Three cups of this is the meat, but the rest is your vegetables. So feel free to mix and match your favorite vegetables.
Next, add the olive oil to the bowl of vegetables and meat and stir to lightly coat everything. Sprinkle on the seasonings and stir to evenly distribute.
Make The Foil Packs – Foil-Wrapped Sausage And Vegetables
Next, grab six sheets of heavy-duty aluminum foil that measure around 16 to 20 inches in length each. Use the heavy duty type because the regular foil has a tendency to rip easily. Lay the pieces in a pile horizontally. Optional: Give each sheet a light spritz of olive oil.


Place two cups of vegetables and sausage in a wide line in the middle of the first foil sheet. Dot with the butter. Close the packets tightly and seal all the edges.
To do this, bring the long ends up together and fold them over to create a seal. Then roll the sides up so everything is sealed tight. This will allow steam to build up inside the packets to cook the ingredients. Repeat this process with the remaining foil and ingredients.
Place each foil packet on a baking sheet and bake in a preheated oven and cook for 40 minutes, or until the potatoes are fork tender. Be careful when opening the packets, as they will release hot steam. Serve with warm dinner rolls and enjoy! Store any leftovers in an airtight container in the refrigerator.
To Grill:
Cook over medium-high heat or 400 to 425º F for 30 to 40 minutes or until the potatoes are fork tender. Flip the packets halfway through.

Instructions
